Garlic Cheddar Chicken
Chicken breasts dipped in garlic butter and cheddar bread crumbs. Makes 8 servings
- 1/2 cup butter
- 4 cloves garlic, minced
- 3/4 cup dry bread crumbs. I use Stove Top chicken dressing mix
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 cups shredded Cheddar cheese
- 1/4 teaspoon dried parsley
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 8 skinless, boneless chicken breast - pounded thin
- In a shallow bowl mix the breads crumbs (or stuffing mix), Parmesan cheese, Cheddar cheese, parsley, oregano, pepper and salt.
- Melt the butter in a 12 inch Dutch Oven over low heat and cook the garlic until it is tender, around 5 minutes. Pour off into a dipping bowl.
- Dip each chicken breast into the garlic butter to coat, then press into the bread crumb mixture.
- Arrange the coated chicken breasts in the 12 inch Dutch Oven.
- Drizzle with any remaining butter and top with any remaining crumb mixture.
- Bake 40 minutes at 350 F. (9 coals on bottom, 15 on top) or until chicken is no longer pink and juices run clear.
