Jalapeno Wild Rice Cakes



  • 3/4 cup water

  • 1/3 cup wild rice

  • 1/2 tsp salt

  • 1tbl flour

  • 1/2 tsp baking powder

  • 1 egg

  • 1 jalapeno or pepper of your likening finely chopped

  • 2 tbl onion

  • 1 tbl freshly grated ginger

  • 2 tbl vegetable or olive oil

  • Combine water, rice & 1/4 tsp salt. Bring to boil, then simmer until rice is tender. 40-45 min.

  • Drain, then add flour, baking powder & rest of salt. Mix until blended.

  • In separate bowl whisk together egg, peppers, onion and ginger.

  • Pour mixture over rice & mix until well blended.

  • Heat oil in skillet, then spoon 2 tbl rice mixture into pan & flatten with spoon.

  • Cook each side until golden brown, then enjoy.
