Jalapeno Wild Rice Cakes
- 3/4 cup water
- 1/3 cup wild rice
- 1/2 tsp salt
- 1tbl flour
- 1/2 tsp baking powder
- 1 egg
- 1 jalapeno or pepper of your likening finely chopped
- 2 tbl onion
- 1 tbl freshly grated ginger
- 2 tbl vegetable or olive oil
- Combine water, rice & 1/4 tsp salt. Bring to boil, then simmer until rice is tender. 40-45 min.
- Drain, then add flour, baking powder & rest of salt. Mix until blended.
- In separate bowl whisk together egg, peppers, onion and ginger.
- Pour mixture over rice & mix until well blended.
- Heat oil in skillet, then spoon 2 tbl rice mixture into pan & flatten with spoon.
- Cook each side until golden brown, then enjoy.
